Almost Italian Salad

1-2 Tbs. Três Pontas Extra Virgin Olive Oil
1 Tbs. Red Wine Vinegar
(Can Substitute Balsamic Vinegar)
Pinch of Sea Salt
Pinch of Crushed Black Pepper
1 cup Butter Lettuce
1/2-1 cup Arugula
1/4 cup Arugula Micro-greens
1/2 Red Pepper, Chopped
1/2 Tomato, Chopped
8 Green Olives, Sliced
(Marinated Italian Green Olives are best.)
1 Tbs. Bleu Cheese, Crumbled
1 Tbs. Red Onion, Chopped
1 Tbs. Pickled Red Peppers (Such as-Mama’s Lil’ Peppers)
(You can get these at the olive bar or salad bar.)
Directions:
Toss all the above ingredients with vinegar, olive oil, sea salt, pepper and enjoy!
