9 eggs, beaten
1/4 c Monterey Jack Cheese
1/4 c assorted peppers, chopped
1/4 c red onion, chopped (or green onion)
1/4 c turkey bacon, cooked and crumbled
1/2 tsp San Juan Blend Salt or 1/4 tsp (of each) sea salt and red pepper flakes
Três Pontas Extra Virgin Olive Oil
Place all the above ingredients in a bowl and mix until thoroughly incorporated. Rub the mini muffin tin with Três Pontas olive oil until each area is coated, and then pour mixture evenly into each compartment, filling them about 1/2 way. Bake at 350F for about 20 minutes or until eggs appear thoroughly cooked. Serve and enjoy!

Can be refrigerated and re-heated in the microwave or frozen and reheated at a later date. It's a great, quick breakfast for the morning and can be served with assorted fruit, avocado toast, 1/2 avocado with sea salt, red pepper flakes and pistachios (pictured), mini pancakes... Lots of options! It's my go-to recipe when I'm entertaining guests.
