Roasted Vegetables

1 cup Três Pontas Extra Virgin Olive Oil
2 tsp Thyme
2 tsp Rosemary
16 Garlic Cloves, Roasted
(or 1 tsp Chopped Garlic)
1/2-1 tsp Sea Salt
1/2 tsp Crushed Red Pepper Flakes
1 Red Pepper, Chopped
1 Yellow Pepper, Chopped
2 Small Zucchini, Sliced
1 Yellow Squash, Sliced
16 Mushrooms, Sliced
1/4 cup Red Onion, Chopped

* Options: You can also add chopped asparagus to the vegetable assortment above before baking or sprinkle shredded Parmesan Cheese on top after baking.

Directions:

Preheat your oven to 450 F, and wash all of your vegetables with Fit Organic Produce Wash as part of your preparation.

Place all washed and chopped vegetables into a baking pan and evenly coat with olive oil and herb mixture. Cover with aluminum foil and bake for 40 minutes or until tender. Enjoy!

*Alternative: Place vegetables along with olive oil and herb mixture into a ziplock bag overnight before baking. This will allow the vegetables to absorb additional flavor. Then pour into a baking dish, cover and bake for 40 minutes or until tender.
