2 cups mixed greens (arugula and romaine)
1 grilled chicken breast (optional)
7 mozzarella ciliegine (cut in 1/2)
12 kalamata olives (cut in 1/2)
A few individual sliced red onions (or chopped)
1/2 cup sliced red pepper
1 Tbs Três Pontas Extra Virgin Olive Oil
2 Tbs red wine vinegar (or balsamic)
1/4-1/2 tsp sea salt
1/4 tsp half-cracked black pepper
Wash greens and veggies with Fit Organic produce wash and spin or pat dry. Place 2 cups of greens in a salad bowl. Cut veggies, mozzarella cheese and olives and place on top of the greens. Next, whisk together olive oil, vinegar, sea salt and pepper and pour evenly on top. Toss well and enjoy.
